My family is very fond of potato pancakes with meat (or as they are called in Belarus - potato pancakes with minced meat), but sometimes I get lazy and I make "Lazy pancakes with meat".
Just a month ago, I found out that this dish was not invented by me and here it is called "Potato Granny with Minced Meat".
The only difference is the cream (or sour cream) I add during the stewing, which makes the Minced Potato Grandma much softer and tastes almost identical to the Potato Pancakes with Meat.

So for the preparation of the Potato head with minced meat (in my opinion) you need:

Minced meat (any to your taste) - 800 gr.
potatoes - 1 kg.
flour - 2-3 tablespoons
onions - 2 pcs.
eggs - 3 pcs.
bacon or smoked brisket - 300-400 gr.
cream (10-20% fat) - 400 ml.
salt and pepper to taste
olive oil

It is better to cook minced meat yourself by mixing 400 grams of pork and 400 grams of beef

Peel the potatoes, wash and grate on a coarse / beetroot grater (you can also use a fine one, but in this case the grandma will turn out to be denser). Sprinkle with 2-3-4 tablespoons of flour (do not stir - this will not darken the potatoes).

Peel the onion and cut into small cubes. Cut bacon or smoked brisket into strips or cubes and fry in a frying pan until crispy. Add the onion to the bacon and fry until the onion is transparent.

Mix the grated potatoes, eggs, bacon with onions, salt and pepper until smooth.

Grease a baking sheet with olive oil and place half of the potato mass in an even layer.

- for frying onions, mix butter and vegetable oil - it tastes better,

- no need to add soda,

- a crispy crust on a potato head will turn out if almost at the end of cooking it is put on the uppermost level of the oven for about five minutes,

- goes well with this dish sour cream sauce with a cucumber or just a glass of homemade kefir.
